
Turkey, Tomato & Zucchini Pasta Recipe – 30 Minute Meal

Here’s a pretty healthy meal that can be made quickly at home. I actually made this a few weeks ago but am only taking the time to blog about it now.
Ingredients (Serves 2)
- Two servings of pasta – any type works – I used spaghetti (lol, you figure out how much you think two servings is)
- 1/2 pack of ground turkey
- 2 roma tomatoes
- 1 zucchini
- Minced Garlic (I love garlic!)
- Mozzarella – as desired
- Olive oil
- Seasonings like salt, pepper, basil, oregano.
The best way to keep this under 30 minutes is to multi-task.
- Start boiling your water for the pasta right away as that will take the longest. Liberally salt the water else the pasta won’t absorb it.
- Start chopping up the tomatoes and zucchini into medium sized pieces. You can chop them whatever size you want depending how lazy you are or not lazy. Haha 🙂
- Heat up the pan and then add some oil
- Stir up the garlic but make sure you don’t it burn
- Start cooking the turkey as this will take long and you want to make sure it’s cooked.
- You can season this while you cook
- Just throw whatever seasoning you’d like (I know, helpful right?)
- You should be boiling the pasta by now.
- Once the turkey is close to being done – toss in the veggies and cook
- Cook until veggies are tender and crisp
- And hopefully your pasta is also done now.
- Put pasta on the plate, top with turkey + veggies, add some mozzarella, and cracked black pepper.
Done. Easy. Enjoy!
You almost lost me for a bit, Syl. I thought you were using zucchini as the noodles, WHICH ISN’T REAL NOODLES!!! (You can’t fool me, gluten-free people!!!)
